What are the cryptocurrencies that you think are the best for sending and receiving payments? because of its speed, its fees, and also because of its stability in terms of quotation? I think Litecoin, Bitcoin Cash, and also stablecoins are very good options

Stablecoins are not always profitable because it depends on which network you send them to. But I prefer only Litecoin, because the speed may be lower than that of BEP20, but the transaction cost is very low.
